The Northern region is among the largest regions in India and is a food lover’s paradise, with a rich and diverse culinary heritage comprising eight states – Himachal Pradesh, Jammu & Kashmir, Punjab, Uttarakhand, Haryana, Delhi, Rajasthan, Uttar Pradesh and UT Chandigarh.

Himachal Pradesh – is known for its rich and diverse culinary heritage. One of the most popular dish of this region is Tudkiya Bhath: The authentic pulao of Himachal Pradesh that pahadi people cook in their own style. The dish is cooked with Indian spices, lentils, potatoes, yoghurt, onion, tomatoes, garlic, cinnamon, and cardamom.

Jammu & Kashmir – is known for its rich and culinary heritage. One of the most popular and signature dish of the Kashmir Valley is Rogan Josh: is a must-try dish for all lamb lovers. The stew is characterized by tender meat and a thick, fiery red sauce coming from deseeded Kashmiri chillies. Lamb pieces are typically stewed in a gravy made with browned onions, garlic, yoghurt, ginger, and aromatic herbs and spices.

Punjab – its popular dish is Butter chicken: A creamy and mildly spiced chicken dish that originated in Delhi during the 1950s. There are more like Amritsari kulcha, Tikka etc.

Uttarakhand – its popular dish is Kafuli: A traditional food of Uttarakhand from the Pahari cuisine. It is an amalgamation of green leafy vegetables which is a rich source of healthy nutrients. Two main ingredients which are essentially required to prepare such dishes are Spinach and Fenugreek Leaves. Both are added together and cooked in the pot followed by salt and spices. Kafuli is popularly known as the State Food of Uttarakhand.

Haryana – is known for its rich agricultural heritage and its cuisine is a reflection of that. The majority of the population in Haryana is vegetarian and their diet is rich in milk and ghee. One of the most popular dish is Singri ki Sabzi: A mouth-watering dish made with dried desert beans called Singri or ker sangri. The beans are stir-fried, soaked overnight, boiled in saltwater, and then cooked on a pan with a few spices like amchur (mango powder) and berries. Yoghurt might also be added to it.

Delhi – is a melting pot of cultures and cuisines, and it is known for its diverse and delicious food. One of the most popular dish is Chole Bhature: A spicy and tangy dish made with chickpeas and deep-fried bread called bhature. It is usually served with onions, pickles, and chutney.

Rajasthan - is known for its rich heritage and arid climatic conditions, which have influenced its cuisine. The state boasts of a never-ending platter with a plethora of dishes ranging from tangy drinks to spicy starters, mouth-watering sabzis, and crunchy bread along with added delights of chutneys, achars, papad, and chhach. One of the most popular dish is

Dal Bati Churma: A traditional Rajasthani dish that needs no introduction. It consists of crunchy batis dipped in ghee along with spicy daal and sweet churma.

Uttar Pradesh – is known for its diverse and delicious food. One of the popular dish is Tunday Kebab: A mouth-watering kebab made with minced meat and more than a hundred spices. It is famous for its melt-in-your-mouth texture and savoury flavour. The dish originated in Lucknow and is must-try for all foodies.

Chandigarh – is the capital of both Haryana and Punjab states in India, is renowned for its diverse and delicious food. The city’s cuisine is a fusion of Punjabi and North Indian cuisines, and it is famous for its street food culture. The most popular dish is Tikki Chaat: A popular street food in Chandigarh, tikki chaat is a combination of crispy fried dough, boiled potatoes, chickpeas, yoghurt, and chutney. It is usually garnished with sev (crunchy noodles made from chickpea flour) and coriander leaves.
